Tomato stew is a versatile West African staple sauce used as a topper for rice, plantain, Moi Moi, and more. Made from a blend of tomato, peppers, onions, garlic, and aromatic spices, Albasa Stew Mix, makes an authentically rich tomato sauce that is uniquely African.

Chicken Stew

2lbs bone-in chicken thighs
½ tsp salt
1 package Albasa Stew Mix
¼-½ cup oil
2 ½ cups water
Oil for frying chicken

Instruction

  1. Season chicken with salt, fry, and set aside.
  2. Mix water and Stew Mix in a medium saucepan.
  3. Simmer for about 20 minutes until the sauce is very thick. Stirring occasionally.
  4. Add oil and chicken. Cook for 5 minutes.
  5. Serve with steamed rice.
