Oven-Baked Jollof Rice
Ingredients
2 cups parboiled rice
1 package of 3.7oz Albasa Jollof Rice blend
1/3 cup oil
2 ¾ cups of water
12oz thawed frozen mixed veggies(optional)
Instructions
1. Pre-heat oven to 290oF
2. Rinse rice until water runs clear. Drain well in a strainer.
3. Boil water in a kettle or pan.
4. In an oven-safe 1/3 pan, add rice, oil, water, and Albasa Jollof Rice blend, and mix well. Cover tightly with tin foil.
5. Bake for 1hr 20min. mixing hallway through.
6. If using mixed veggies, add in the last 10 min of cooking.
7. Mix and serve with any meat of your choice.
